Title: Pig Candy
Post by: Roget on December 21, 2017, 02:12:13 PM
I made some pig candy (pork belly burnt ends) yesterday in the GMG Davey Crockett.
You all probably know how to make these, so I won't boor you with the details of the cook.
But I will show you some pictures.  :D

A five lb. pork belly

A bit of butt rub
(https://storage04.dropshots.com/photos7000/photos/1366801/20171219/113059.jpg)

A bit of smoke
(https://storage04.dropshots.com/photos7000/photos/1366801/20171219/151710.jpg)

Braise for a bit, then a bit of glaze
(https://storage04.dropshots.com/photos7000/photos/1366801/20171219/172029.jpg)

Finished product

These will go to my boys for Christmas.
I did sneak a couple to make sure they were good.
They were.

Merry Christmas

That is a beautiful tub 'o grub!

Usually when folks are talking Pig Candy...it is bacon with brown sugar and cayenne or similar.

I agree!   I rarely see Pork Belly here, but those look just like a cross between Caviar and Crack!

I think Tee is referring to Pig Candy done with the thick bacon and brown sugar spiced with some type of red or cayenne pepper for heat along with some other spices.

Here is how I prepare that type of Pig Candy.

Couple trays ready for the smoker.

On my Backwoods smoker.

My results for this type of pig candy.

It sure doesn't make any difference of what you call it, it is guuud fixed in either method.

Redneck Fudge is what comes to mind. Outstanding.
