This year i followed the SnS video and did it the way they suggested. For the rub I followed the rub from amazingribs.com - "Mrs. O'Leary's Cow Crust". I was concerned about not keeping the bones tied but it worked. I did some matterrs with presto, stuffed mushroom, and I used the Alton Brown mac and cheese recipe, which was awesome.

That was almost perfect Rad.....you just needed a bigger plate...in fact a platter

Rad: Looks great and now I am hungry. What temps and time did it take to roast that meat? I was wondering about this as I also used the Slow n Sear and it took mine about 4 hours at 225-240 degrees. This method does work great.

I tried to keep the kettle between 225-250. I pulled when the IT was about 125. Lit a bunch of bricks and finished up the sides and seared 1 minute per side.

I was really concerned about removing the bones, but it works.
