Title: A Little Fun On My MAK

I am slowly getting back to using my MAK.  I had one more pound of kosher salt brined peanuts that I needed to smoke, this time with a different flavor pellet (apple wood).  I had previously done two pounds using oak pellets.  Sorry, there are no pictures of the first batch of peanuts.  I decided to try something I saw a friend of mine do some time back, smoke a chub of bologna, cut into chunks and pickle the results.  I also decided to try a recipe I got from a new friend from Canada.  This involved smoking and pickling some hard boiled eggs.
 
The first picture shows the peanuts and the bologna on the top shelf of my MAK while it is in the “smoke” setting.

The second picture shows the Vidallia onions, small jalapenos and hard boiled eggs in the cold smoking side of my MAK.  The onions and jalapenos were added to the pickling “brew” and boiled until everything was nice and tender.  I used the same pickling liquid for both the eggs and the bologna.

The last picture shows three jars of smoked pickled eggs and two jars of smoked pickled bologna.

I plan to give two jars of eggs and one jar of bologna to my son as a Christmas present.  His wife will kill me.  Oh well, you only go around once!  The smell of everything was good.  I can’t wait to open a jar of each and sample them.

Looks great..got any recipe for us to recreate this. I would like the brine recipe please. I see jalapenos and black pepper corns. Anything else? Let us know how they were when you try them.  Pammie ★*˚°。°

Okay.  I just received a PM from my friend in Canada.  He told me to go ahead and post the recipe, so here goes.  Before I post, he hangs around on the Bradley forum under the handle of "Lumpy".  Mike is a stand-up guy, and loves to party!  I'll alos post this to the recipe section.

SMOKED PICKLED EGGS

4 cups white vinegar
1 cup water
½ cup apple cider vinegar
½ cup white sugar
20 jalapenos, sliced
3 large Vidalia onions, sliced
6 garlic cloves
1.5 tbs Kosher salt
4 tbs black pepper corns

2 dozen eggs

Boil eggs and peel
Spread evenly on racks, onions, jalapenos and eggs
Cold smoke for 2 hours with maple or apple wood

Boil liquids, spices, onions and jalapenos
Heat up jars in oven

When liquid is boiling put all ingredients into Mason jar.

Let cool, refrigerate and rotate jars daily.

Enjoy.  I will.

Art - we will  under the right circumstances - allow Canadians as members here...... ;D

The circumstances being that they have to bring pictures of good food and alcohol with them!!! ;D ;D ;D

Yes I did.  I doubled the recipe because it didn't look like it would be enough.  All I really needed was about 1 1/2 times, not 2 times the recipe.  I am looking forward to trying this before Christmas.

I decided to enjoy some of my smoked pickled eggs and bologna for lunch today.  Really good!  The jalapenos were still pretty spicy, however.  I’ll do this recipe again.
