Title: Compart Duroc BB Ribs on the GMG Davy Crockett
Post by: HighOnSmoke on August 05, 2018, 05:59:42 PM
It’s ribalicious Sunday. I am cooking a rack of Compart Duroc Babyback ribs today on the GMG Davy Crockett. I seasoned them
with Killer Hogs AP rub and their The BBQ rub. I am cooking them at 215 degrees and using GMG Texas Blend pellets.

2 hours in and getting some good color. I will be spritzing them with plain water to keep moist.

4 hours into the cook and the ribs are just about done. I sauced them with Killer Hogs The BBQ Sauce and will let them set up
for about 20 minutes. I did not wrap today.

Ribs are off the smoker and going to rest for a bit before slicing.

Ribs are sliced! Very tender with a nice crust and smoke ring.

Plated with homemade hash brown casserole and homemade baked beans.

Dinner was delicious! I am down to my last rack of Compart Duroc ribs so I need to start saving pennies!

Just perfect! I would like to try those higher end ribs. Are they worth the money assuming I can find them?

Oh most definitely worth the money Pappy. Try their pork butt while you are at it. Here is the one I got. Very pricey, but so much better than you can get at ANY box store (IMHO).

Those are some beauties!  Heritage breeds like Duroc and Berkshire blow the stuff you find at supermarkets out of the water ...  for an occasional splurge they're worth the price.

Thanks. Pretty sad I didn't know that. My mom was raised in the town they are in.

Great looking ribs. I have been going to a local butcher shop for some chicken necks and backs to make bone broth. I've seen them caring Duroc ribs and couldn't remember where I saw that name. Now I know to grab a rack or two.
