Title: Baby backs and Tamales for Christmas Eve
Post by: smokeasaurus on December 24, 2011, 08:34:13 PM
Mama wanted back ribs for Christmas Eve. Had a co-worker come by with a platter of homemade tamales(beef, chix, cheese and chili) and dinner was all set.
Used T2's bacon rub (friggin Excellent T) and I tossed on just a touch of coffee (Yuban).Foiled em after 3 hours and added a little more of T2's bacon rub (did I mention that is friggin excellent? 8)) and then finished em up with some of CB sweet and sassy finishing sauce. Used peach wood for smoke.
I sure hope and wish everybody all over the world can eat nice the way we all do.......

NICE Smoke!

I hate to admit how long it has been since I have had real tamales - like from Texas.....And the ribs looked great ( tell us how they tasted - please!) The site and though of home made tamales was darned near a tear jerker. :'( ;)
