Haven't made the "drive" out of town to get a brisket yet but scored a nice 4 lb Angus chuckie

Time to do a Poor Mans brisket

Oh no. The word brisket was mentioned...……………… 

I sense an ill wind blowing in from the West.

I might not live in Texas anymore, but I still roll Central Texas style when I smoke
Used a pellet mix of Pecan, Oak and Mesquite

Went about 4 hours at 225 and then wrapped in peach butcher paper till internal reached 205 degrees

Sliced just like butter.

OH MY! I'd eat that! We have a Dickey's BBQ here in Dothan, AL.  I will have to see if they have rubs, love their BBQ.
