Title: Pastrami Experiment

Decided to try and smoke a corned beef. Picked up a small 3-pounder at Costco and soaked it overnight in water.

Into the Memphis for a few hours of smoke... I found lots of different recipe/techniques online, so I just decided to wing it and treat it similar to a brisket. Smoked it for a few hours to develop some nice color, then wrapped it in foil and back on the smoker to IT of around 195 degrees F. Cooled it down and wrapped it in plastic wrap for a couple of days in the fridge.

Sliced up nicely since it was cold from the fridge... Onto the stove for a little bit of steam. The cheese is some Jarlsberg that I smoked around Christmas.

Not the purdiest sandwich...
