Title: Pulled pork omelet?

I'm thinking (I know that's a dangerous thing)...

I have some pulled pork left over... it might be interesting to make a pulled pork omelet with some jalapeno and Jack cheese...

(Don't tell my doctor!)

I use pulled pork in omelets all the time.  Makes for a good contrast in texture but needs a little "oomph" like from the jalapenos or maybe some good hot sauce.  I usually toss in a little finely chopped onion, too.

A little salsa verde and some Ranchera cheese on top of that omelet would seal the deal........

Sounds good, I would go for it. Would blue Cheese and sliced tomatoes be out of the question, just sound good right now? :)

Pulled pork and just about anything sounds OK to me.  That's why I always serve and freeze without sauce (if someone wants it on their own, they can add it).  It remains more versatile for leftovers IMO.

Two jumbo eggs, pulled pork, minced jalapenos and Jalapeno Jack cheese... Mighty fine breakfast or lunch.

Pulled pork omelet sounds like a great idea.
I like to add smoke pepper for a little smoke but using your idea of smoke pulled pork for the omelet
well that would have to be good.
