Title: brisket ala spark

my Costco has been having brisket flats at the meat counter.  ya.  so I've been cooking a few using LA and muebe advise.  works every time. 

used some balsamic for glue.  tatonka dust all the way.  this is going to be great.

no smoke mode.  cruising @ 240° from the get go.  thru 2 of the kids beer in the pan.

next morning.  big smile, big smile......

wrapped up @ 170° like LA and muebe said.  added 1/2 cup of beef juice.

put back on until it hits 203°.

opened it up to stop it cooking.  after 15 minutes or so I covered it back up and left on the mak.  after 2 hours I put in the frig.

well, remember when we were talking about French dips.  I was telling my wife about them.  she said you never had a French dip sandwich.  nope.  she going to take care of me.

she thinned out the left over juice from the brisket and put the meat back in it.

and I get juice to dip it in.  oh ya.  i'm so happy.

I love this French dip stuff.  very very good.

great looking brisket.  I still need to make a brisket. Hope it turns out looking like this one.

I've seen the same flats at Sams club. I passed them up hoping a full packer would show up, none as of yet.
I've never made a brisket either...I might give this one a whirl next weekend.

How big was the flat and how long was the total cook?

How big was the flat and how long was the total cook?

not sure how big.  it was the biggest flat I have ever cooked.  how long = 10 3/4 hours.  the fastest I have ever cooked one.  normally about 12-14 hours or so.   8)

Now that's a great way to serve up brisket flat!

I normally don't like the flat, but I'd take one of those sammies any day of the week. 8)

Have you asked someone behind the meat counter?  My Sams (Hickory, NC) often has packers but for some reason doesn't put them in the case.  I just get somebody to go back to the walk-in and check.
