While Katy and I were wrestling with the new Traeger...    I tossed these on the MAK for a couple hours.

Kept some for us, and vacsealed the rest for a 'Smoke 2 Go' gift package.

No, this is from Paducah Kentucky of all places!  Hughes Meat Market.

Apparently, they misread the recipe and switched the pork and rice ratios...     Turned out to be quite popular!   And it has just the right amount of Zing to it.

It's already poached to a fully cooked state, so I just toss it on 'smoke' for a couple hours to give it that mahogany color.

Man, that looks good.  This is one of the things I am going to look for when I head to New Orleans on the 23rd.  I want to taste it.  I am also looking for any suggestions about spices to bring back with me that are really only found in that area.  Something that will pack easily and make it home in a suit case.

Head to Rouses Market on King street..   Almost everything in there is "Certified Cajun" and from Louisiana.   

Check out Central Grocery as well.

Then look at buying a 2nd suitcase...    ;D

Art - you gonna learn "makin' groceries" in NOLA? ;D

Just a little additional info: New Orleans food is not Cajun, tho one can get Cajun food in N.O. You can get a lot of Creole food in N.O. - and to find the Cajun stuff - get out of N.O into SW Louisiana. Or even South of N.O..

If you are driving, route yourself thru  Natchitoches LA ( pronounced: Nack-ah-dish) and load up on Natchitoches meat pies.....UN-BELIEVABLY GOOD........

IN New Orleans  metro- here is a hit list:

Deanies's - by Lake Pontchartrain - Seafood

R and O's - by Lake Pontchartrain- BEST Muffaletta ( Central is o.k. - but way too tourist oriented)

Red Wagon - Harahan - BEST Beef Po Boy

Got a list of great places I can recommend and will call you if you want some more.....

We are flying in and not renting a car.  We are staying at the Royal Sonesta (per Rick's recommendation) on Bourbon St.  We are only there till Friday morning, so the eating will have to be relatively local.  I do want to at least "see" some of the famous places.  I have heard some horror stories about the cost of some of them.

A couple of questions come to mind.  First, where can I get the best (and most afforable) Sazerac.  I want to try that while in NO.  Second, what are the items we should be looking for in the way of food and are also relatively close to the Royal Sonesta?

I have already been thinking about taking a second suitcase that could be packed with goodies.

Rouses is just a few blocks E from the Sonesta.   That's where we have stayed the last 2 times.  Excellent hotel and location.   It's just a small supermarket chain, but they carry lots of Louisiana products.     Good for beer/liquor runs as well.   ;D
