I recently purchased a full pork loin and portioned it into serving size (about 1.5 pounds since there are only two people here). I decided to stuff the loin with a pork stuffing, cranberry and apple mixture. Sautéed yellow onion, celery and diced apples with some butter and cinnamon; combined it with some garlic croutons and seasonings.

Roll cut the loin into three "pages" and seasoned the interior with some pork rub before adding the cooled stuffing mix...

Tied the stuffed loin with butcher's twine and seasoned the outside with more pork rub.

And it's off to the smoker with apple wood for a couple of hours at 225 degrees F. until it reaches 160 degrees F.
