Title: Smoked then grilled Yard-Bird

Spatchcocked a 5lb bird then put in my simple brine overnite.
(spatch-cocked bird, cut tail off & excess fat with trauma shears in less than a minute!)
Rinsed, oiled & seasoned.
Built a small fire in charcoal basket for indirect cook.
Smoked indirectly for 50 min, then put over the fire for 30 min.
