18 lb cryovac of butt.
8 hours in cool water bath still partially frozen :o
Well I like to cook smaller butts anyway ::)
This is both a need & recreational cook. Two butts for tailgating for the cowboys game Nov. 10
High 70F , not a cloud in sky, lite wind ,after the storms just enjoyable to sit & feed the fire ;D
The cooker is my New Braunfel's offset, charcoal starter with oak mini logs for fuel.
Mustard rub with Tim's fine swine BBQ rub.

What are you doing with the charcoal/splits? Why two baskets?

Oops that pic was for another post, I have two sized baskets I use, the small for short or monitored cooks & the big for set & forget.
When cooking with wood I start with 2-3 lbs charcoal & couple chunks wood & add a split every hour of so after.

Got it. I thought you were using two baskets (surprised by even one, but hey whatever) and was confused. So just sticks on a charcoal bed this time, right?

Very tasty, Tim' rub is very good!
I'm reminded that burning wood gives a milder smoke taste than charcoal with smoldering wood.

Day-um LA...I really missed out not getting that CB740..would have been perfect, but guess it wasn't to be. Nice butts. Pam .☆´¯`•.¸¸. ི♥ྀ

Those are outstanding LA. My gal likes when I burn only wood. She seems to complain when I go the smoldering route......
