And, we're done. Pulled them both at 161°. Mutilated one trying to get the netting off, so I'll leave it on the other one for a while and let it 'steam' a bit in that pan.

They'll spend the night in the fridge, and I'll slice/vacuum seal tomorrow..

You LOVE that B.Y.A. sauce Squirt! ( Burn You A.. ) I like the siracha too - but I think you are a dedicated fan. They llok great! And I bet the flavor of a little smoke with the siracha makes for a nice combination.

Hopefully it doesn't 'B' too much! These are for lunch meat..... (way cheaper than the $6.99/lb deli junk)
After letting them rest for about 90 minutes (foil covered pan, wrapped in golf towels, stuffed into microwave), the netting popped right off of the other one. I wrapped them in saran wrap and stuffed into a gallon freezer bag.
I'll put them under the knife tonight.

Those look great problem Kimmie wouldn't eat them to hot and not burnt ;D ;D
I rub the breast down with oil before cooking this seems to help in the netting removal

No. These come 'enhanced' with a saline solution, so no brining is necessary.

We had some last night for dinner. 2 thumbs up! Just a mild hint of Sriracha on each slice.
Eating the scraps/crumbs off of the cutting board was a different story. :o

Yeah, and licking the fingers after pulling the netting off got me as well. :o
I'll try to snap a few tonight. We did a fair amount of damage to one of those roasts last night.....

I've got the other one cut up now. Will probably make a Shepherd's Pie or something along those lines to use it up..

Dang Squirt that looks great! Never even thought of this type nof meat for sammie's. The picture is 1st rate as well!
