Title: one of thee best ribs to date
Post by: sparky on June 07, 2012, 02:54:02 AM
well, be on my rib quest again.  ya know, just another variation on a theme.  its a zen thing for me.  like catching a really good wave and getting tubed.  can't explain the feeling.  just cool.  this is like that.

a friend of mine (T) told me to try these rubs on my ribs.  okie dokie.  da players.  doing these "Sparky's Signature Style".

on #336 @ 275° top shelf.

got hungry.  having a adult beverage or 2.

getting ready for some FL.  look at that color of that rib.  color master strikes again.  von da pa.

FL in progress.

look at that color.  it is fantastic.  deep rich rib color.  it doesn't get any better than that.

welp, all done.  time to let them rest.

oh ya, all cut and ready to eat.  manza....

i must say.  the bovine / pig rub was great.  the flavor was to die for.  i'm real picky when it comes to rubs for my ribs.  this one was in the top 3.  thats hard to make the top 3 in my opinion.  i was impressed.

I am proud and happy that you like the rub Sparky!

Everybody likes something different - so, it is always a guess as to what to recommend. But - I will tell you that the Fine Swine and Bovine is used by some top names in competetion ( can't tell you who - privacy agreements ...some of the big competitors like to keep their "secrets"  ;D) - and has won some BIG trophies!

Sparky,
Your ribs never cease to amaze me.  They keep looking better and better with each post.  I think I need to do some ribs, soon.

I know if I did those ribs I wouldn't have been able to let them rest too long....I would've chomped em down right off the pit!!

I'm with ya.

Heck, I'd have just pulled a chair up to the pit. :)

The ribs look good as always. Do you cook them on the top rack most of the time. I took your advise and cooked my last ones at 275* and they came out great. It was the natural pork ribs thread i posted Natural pork ribs (http://www.letstalkbbq.com/index.php?topic=904.msg7815#msg7815) I was thinking about getting a rack for my Traeger. Thanks.

Guys I am scared to death to go out and fire that ole girl up. I got laid off along with 23 others 2 weeks ago. Since I am still dealing with a shoulder injury. My only income is my work comp check. (Momma does work at a convenience store) It would be all I need to be out there trying to lift that lid with one arm or two, and have someone take a picture. Cooking on the big smoker can wait until I am healed. Then I am going to hit it big time. Trust me it is killing me to have a freezer full of meat, 15 bags of lump charcoal, 2 big piles of sugar maple wood, a great big smoker/cooker, and NOT being able to play with it!

For those that are wondering Sparky and I WILL ALWAYS give each other crap about their ribs its a running joke between us and is all in fun ;D

We might have to come over and use it for ya...this way you won't feel so bad!!  ::)

Are you able to at least use your other pits....maybe have someone fill it with charcoal for you so you aren't seen lifting anything heavy....cause ya just know from time to time you are probably being watched  8)

Smokeasaurus don't need no drugs...I am paranoid naturally  :o

Ah Chris I was just giving ya a hard time :P

I know things are tough for you right now but hopefully things get better for you. One thing I can say is I have several family members who are out of work and even lost their homes. My uncle's company of 30 years is struggling and may need to shut down. He will be laying off 13 great employees and it breaks his heart. This hope and change ain't working out IMHO.

I just thank God everyday that my wife and I are still working. I still have a roof over my head and very healthy & happy children. It hurts me so to see all my friends and family struggling right now. But things have to be bad to eventually get better.... Just did not think they would be this bad for this long  :-\

Don't mean to derail your thread Sparky. Now back to some great rib discussion ;)
