I love mexican style chicken and what better way to celebrate Father's day.. This time I tried out a new recipe and used my Tejas pit. I wasn't able to take a picture of the final plate , but you guys get the idea.

Nobody does chicken like Robbie!!  He has a family recipe for a great Mexican Marinade that makes those chickens down-right good eating!!!!!!

I'm going to spatch-cock chickens like that in 2 weeks for a girls slumber party. What did you put on them please? I have a long flat grill that is about 20" x about 4" long that will have charcoal in it. I can raise the level of the chickens so they don't burn, so no problem there. What is on your Mexican chickens? I am also gonna do a honey mustard ham on the grill too and just cover it with a pan to keep the heat around it.  Thanks Pam  .☆´¯`•.¸¸. ི♥ྀ
