Eschewing the traditional all beef meatball and pork bacon wrap for a 50/50 (pork/beef) Italian meatball and beef bacon... A generous coating of Super Pig rub and a dab of Frank's RedHot on each MOINK, and into the electric smoker they went (probably around 300 degrees but I didn't bother putting a probe in and the door thermo is crap) for Friday lunch for me and the boys.  Wife is out of town for a few days, so we get to eat all the stuff she doesn't like.  If you haven't tried a MOINK with beef bacon, I highly recommend it.  Absolutely one of the moistest and most flavorful bites I have had in a long time.
