TH - you have some awesome bark on those butts. I will try the burst of heat at the end to get better bark. I hesitate to use mustard or molasses as a base because I am not much of a molasses fan and I am not sure I want the pulled product to taste like mustard.

Thanks for the info on the Maverick. That is the one I have had my eye on at Amazon. I like the looks of the iGrill but there are a lot of bad reviews on Bluetooth range.

I was at the dinner when smoker junky served these butts.  They were phenomenal!  I especially liked the vinegar sauce he served them with.

These were my contribution to the meal.  My first time smoking a butt.
