Looks like it turned out extremely well. How "Beefy" was the taste after the drying?

I'm in deep trouble ..... my wife walked in and saw me licking the computer screen. I tried telling her it was only  aged brisket ......... she walked away disgusted  ;D

Yes it was worth the wait. The other couple who ate with us said he has not had brisket like this, he ate 3 plates.

The point sliced very easy and the fat in the middle melted in your mouth.

Will i do this again?

Every other UMAi dry aged meat I have made has not disappointed me. Glad to hear that the brisket came out so good!

Been watching this Nepas. I was thinking when you said dry aged it would be dry brisket But the brisket looks great and plenty of moisture!!! Nice cooking!!! Don
