Nice hunk a meat.  How long did you leave it in the bag and how much do you think you had to trim off?

Rick, that is the best looking brisket I have ever seen. You just might have convinced me to go the dry aged route. Gonna order those bags today. One more week and the briskets should be going on sale for Labor Day.

I hope so, because they have really out priced themselves lately.

I've seen them above that. I loved it when no one know how to cook Ribs, Butt and Brisket. I remember getting butts for under $1lb but I also remember getting gas for under a $1 a gallon.

Many of us remember getting gas for 23 cents a gallon!  You got full service for that - windshield washed, oil checked, checked the water in the radiator, and air in your tires.  Then they gave you either Blue Chip or Green stamps which you put in books and could redeem them for lots of gifts.  You'd often get glasses and other things.  When there was a gas war going on at corners you could get the gas below 20 cents  8) ;) ...

Nowadays I freaked out last Spring when I saw a gallon of gas for less than $3!!!  Course, that wasn't in Kalifornia  >:( :(
