Sunday night Lamb
« Reply #-1 on: August 17, 2014, 11:20:23 PM »
Cooked a semi boneless Lamb leg for dinner with couscous stuffed zucchini.

Browning in the cast iron

On the charcoal at 275 degrees with water pan 1/4 full

Got to try out some craft beer. Really liked the dark. No bitter aftertaste so Wife loved it.

Three hours later pulled at 160 degrees and let it rest with the grilled zucchini

Very, very moist and tasty. Zucchini had chicken broth, couscous, olives, roasted peppers and  feta cheese.

Then relaxed with some wine and tried to take pictures of the hummingbirds. Didn't work thou.

Usually don't cook lamb to quite that temp, BUT I'd eat that in a heartbeat!   Looks very moist and tasty.    AND, second the motion for the zuke recipe!   Thanks.
