Smoked Chicken and Sausage Jambalaya - Thanks HIKERMAN!!!

A while back I saw a post by Hikerman about smoked chicken and sausage jambalaya and I just could not resist.  I had some home-made smoked sausage that my wife's uncles make and I purchased chicken thighs to smoke.  I purchased boneless skinless thighs to put on the smoker with the sausage to start.





Cut into bite size chunks

Thanks Hikerman for the recipe.  It turned out great - lunches for a few days this week!!!!

You bet it does, Jambalaya is one of those dishes that always seems to enhance its flavor after a night in the fridge and reheated, heck even cold it taste great.  ;)

Thanks everyone!  It WAS even better the next day - cold - hot - it was great either way.  It seems to me that everything smoked has a better smoke flavor the next day.  This recipe was super easy and really good - made a ton too - great way to feed a bunch of people and did not take a ton of time either.
