First butt on Traeger
« Reply #-1 on: August 25, 2014, 07:21:22 PM »
Put a 7 1/2 lb bone-in butt on at 6:30 this morning.  Smoked it for 3 hours, kicked it up to 225 for 3 hours, foiled with a bit of apple juice, and cooked for another 2 1/4 hours to 205 IT.  Then FTC for 3 hours.  It was still 158* when I pulled it.  It pulled like a dream.  Netted 5.4 lbs which I thought was was fairly good.  Pretty good sandwiches.

What did you do with the juices?  Saved them, I hope.  Defat them.  Take the remaining juices and reduce them to intensify the flavor of your new homemade sauce.  Pour this back over you pulled pork when you get ready to serve.  You're gonna love it!!

In fact, if you cook a brisket or chuck roast (to pull), do the same thing with the juices.  Don't lose that good flavor you created.
