Bacon Wrapped Pork Tenderloin with Black Iron Skillet Spuds
« Reply #-1 on: September 19, 2014, 08:48:53 PM »
Tonight’s dinner consists of bacon wrapped pork tenderloin and some black iron skillet spuds.
Tenderloins are wrapped with bacon, seasoned with Oakridge BBQ Sweet Rib rub and going into the
refrigerator to rest.

Potatoes, onion and garlic were seasoned with Garlic pepper.   Once seasoned I poured one stick of
melted butter over the mixture.

Put onto the Grid Iron, using Lumberjack MBC pellets and starting at 250 degrees.

About 45 minutes later I added the tenderloins to my grill grates.  I will be cooking them to 140 – 145.

Potatoes were topped with smoked Pepper jack, smoked Sharp cheddar and some bacon.

Potatoes are done!

Tenderloins are done!

Here’s your plate!

Simply delicious meal. Tenderloin was very tender and juicy. Potatoes were great as always.

Mike,
I think you need more bacon.  You were a bit light on your bacon quota.  Still, I'd hammer that.  Looks very tasty.

We'll be expecting those potatoes at the gathering!   That way I can insure LVC his expectations were correct
