A little Charity Work

During the summer months about 5-7 times a year here in town. They have what is called "Rocking on the River" in the park by the river. Where different bands come and play. After raising enough donations a small amphitheater was built. Now on the nights that there is music in the park, different non-profits get the opportunity to be the only food vendor during the evening. My children's elementary school PTO will be selling the food this coming Friday night. After the ideas all got thrown on the table. I said "Them ideas suck, Let's do Pulled Pork!!" Should have kept my mouth shut! The PTO is now selling a Pulled Pork sandwich and a bag of chips for $5 or a Grilled Hotdog and a bag of chips for $2. Guess who is cooking all the meat and in charge of the whole operation? The big dummy typing this that's who. Here's how things is going down as of now.

The first 4 Butts all cross hatched and seasoned up



All loaded into the Traeger.



About half way there



Getting done and starting to come off



4 Butts all pulled and chopped. One 18 qt Electric Roaster full.



I have 2 more Butts to do today and they are in the Dragon Lady doing their thing as I type. I won't post pics of them. I will update this as the whole thing unfolds and we have the fundraiser event.


Oh yeah, I also made 3 quarts of my BBQ Sauce to use on the Sandwiches.

Newbie here, what is the benefit of the cross hashing? More surface area for bark? Curious, as they look good!

Newbie here, what is the benefit of the cross hashing? More surface are for bark? Curious, as they look good!

Whether I am right or wrong. I do it to get more surface area for the rub to get into and more area for the smoke to get to. It also makes grabbing little taste tester a whole lot easier. As those little squares of fat render out and get crispy good!!

I know I said I wasn't going to post any pictures of the two butts I am doing today. However I had run out of Mustard for the base and I couldn't find my Meadow Creek refill I had hidden so I wouldn't use it all. So this morning I just went Bare Butt and slapped a little John Henry's Pecan rub on them and when I went to check on the Butts. They just looked Perty as a picture so I took one.

Don't focus on that little brown chewy chunk of goodness. Right there in the middle above the large opening. He aint there any more!!

That pork looks superb. I bet you sell a lot of it.


Take it from another "Big Dummy" who volunteers a lot of time to the local schools music program; Big Dummies like you come with a Big Heart, and you're making a difference in the lives of many kids. And there's nothing dumb about that! :)

Well everything worked out pretty good. Spent about 11 hours setting up, selling, then tearing down packing up and taking it all home. Maybe that is why my feet and ankles didn't want to work the next day. Everyone loved the pulled pork sandwiches and we got a whole bunch of compliments.

Here we is all set up and getting started. Everyone was watching the first band Chasing Shade



Getting started selling. Hotdogs in silver roaster, Pork in white roaster and pork refills in the Bradley.





The Hotdog cooker and the Decoy SRG



The Decoy SRG you ask?? Yes we needed something to make smoke so folks would smell it, get hungry, and come get a sandwich. So I brought the SRG along and burned some pellets in the A-Maze-N Pellet Smoker to make smoke. Could smell the smoke a block away from what I was told!!



Even broke out the High-Tech lighting system once it got dark

And I love the decoy!!!  We talked about using it doing the same thing. LOL
