Cherry Wood Smoked Mr. Yoshida’s Cheesy Meatloaf

This is my version of a recipe that I saw on Smokingpit.com.  Here is the recipe I came up with:

1 pound 80% ground chuck
1 pound fresh pork sausage (made at The Gathering)
1/3 cup of Mr. Yoshida’s
2 eggs
1.5 cups garlic and herb bread crumbs
1 package of Lipton Onion and Mushroom soup mix
¼ cup diced onion
¼ cup of dehydrated red and green peppers (hydrated)
3 tablespoons chopped garlic
1 tablespoon of Fine Swine and Bovine
1 tablespoon of Jallelujah Bacon Jalapeno rub
1.5 cups of packaged shredded Monterrey Jack, Colby and Cheddar

I mixed it all together, shaped it the way I wanted it and put it back in the refrigerator, covered, for a
couple of hours. I zapped 2 bakers for about 5 minutes in the microwave and after letting them cool I
sliced them, along with half a Vidalia onion, and then seasoned them with garlic pepper.  I added 4
tablespoons of butter to the mix.


The meatloaf and potatoes were put in the Grid Iron at 225 degrees burning cherry wood.


I glazed the meatloaf with Sweet Baby Rays and then pulled them both after another 10 minutes.
Meatloaf was at 165 internal.


Here’s my plate!


I have made numerous meatloaves using sausage that did not come out very good. The sausage in
those seemed to overpower the flavors.  With this meatloaf and using the fresh made sausage it was
perfect!  No overpowering flavors from any of the ingredients.  This is one of the best meatloaves that
I have made to date.  No complaints from anyone!  Potatoes spoke for themselves.

Nope, I buy the dehydrated red/green mixture from Penzeys. A little pricy but worth it since we don't use peppers
that much and when I buy the normal ones they seem to go bad before I use them all.  ;)
