Needed a Good Birthday Present

I needed a Good Birthday present for my Step-Dad. He's one of those guys that if he want's it, he goes and gets it. Makes getting him things really hard. I know he has a thing for BRISKET. He goes to the locker plant and buys it in 1/2 pound packages. Last time I was at the locker plant he goes to I looked and they is getting over $13 a pound for cooked brisket. I know what He's getting this year for his Birthday. He's getting his own Brisket!!

I pulled a 12 pound Choice Brisket out of the freezer and thawed it out, trimmed it up a little, then went to looking for a rub to put on it. I decided to go with this



I rubbed the brisket down with a good heavy coat of rub.



Wrapped it in plastic wrap and put it in the fridge for an overnight rest. This morning I pulled it out and fired up the Dragon Lady. I was going to use the Bradley but we have an EXCESSIVE HEAT WARNING for today and I don't want to be outside anymore than I have to. I can see the Dragon Lady from the kitchen window.



Tossed the Brisket in set the Dragon Lady for 225 and let the games begin.

Checked on the Brisket at the 4 hour mark and it is cruising right along with a 169º IT

Not just too bad at all. Right at 6 hours and both the point and the flat are both at 187º. Time to pull it out and head for a little FTC time. Then it will be off to the fridge for an overnight nap until slicing tomorrow. Here we is coming out of the Dragon Lady

Killer Good Sparky. I have some of their Hickory Rub that I will be testing out on some ribs at the Smoke Out. Should be really good if it is anything like the brisket rub. If I remember right Kynola used it when he took Second in the Paducah Brisket cook off

I normally cut off what I'm eating the day of the cook, then I chill & slice the rest ( slices better when chilled)

LA I will be chilling and slicing all of it as it will be packaged and given as a Birthday gift on Thursday. Not gonna eat any of it, well maybe a small tidbit will go missing when I pull it out of FTC and send it off to the fridge. ;D

I was taking the brisket out of FTC and that end piece where the cut is just sort of FELL OFF. So I just had to slice it up for oh you know "Quality Control"!! That's my story and I am sticking to it!! Wouldn't You??

Zacks is good stuff. I have the Brisket rub, sweet rub, hickory rub, and grilling spice. YEAH, I like their stuff. It's made about 45 minutes from where I live so it's readily available in the supermarkets.
The grilling spice is All I use when making protein in the SRG ;D
