Turkey on the Weber

I wanted try a turkey my weber. I pulled one out of the freezer earlier this week to let it defrost in the fridge for a few days. I was going to brine it but I never got around to it. I was going to set it in a pan using the roasting racks but I did not have one that was the right size, either too small or too large, so I decided to put a drip pan under the bird and let it cook away.


Inject, EVOO, S/P/G


Injected and seasoned


Grill set-up for indirect cooking but not low and slow, with a drip pan. I am going to try making gravy. I have a couple of jars just in case.


Bird is on


First hour I rotated and added about 10 more bricks and some more wood. I want to keep the temp between 350-400

Hour two, rotated again and more heat added, ends covered to keep them from burning.

I would think finish with the tail towards the fire to get the dark meat to 175°
and protect the breast to 160°

Two and half hours in and rotated again to let the dark meat cook closer to the heat

I have cooked many a turkey on my Weber over the years.  IMHO, the best part is yet to come.  I love taking the carcass of the bird and cooking it down for some great tasting turkey soup.  Save some of your stuffing and gravy to add to the pot.  My mouth is watering just thinking about it.
