SMOKED PICKLED EGGS

Not quite poultry, but close.  Even closer to appetizers, so this is what I chose.  If it needs to be moved, move it.

4 cups white vinegar
1 cup water
½ cup apple cider vinegar
½ cup white sugar
20 jalapenos, sliced
3 large Vidalia onions, sliced
6 garlic cloves
1.5 tbs Kosher salt
4 tbs black pepper corns

2 dozen eggs

Boil eggs and peel
Spread evenly on racks, onions, jalapenos and eggs
Cold smoke for 2 hours with maple or apple wood

Boil liquids, spices, onions and jalapenos
Heat up jars in oven

When liquid is boiling put all ingredients into Mason jar.

Let cool, refrigerate and rotate jars daily.

Since eggs = un-born chicken embryos....sounds like pre-emptive chicken to me :o ::) ;D...And looks great! Tho it may be dangerous to play the "pull my finger" game after consuming a few of those, Art. :P Might turn a fellow into a human flame thrower....

Hi..today I am cold smoking some eggs, jalapenos, red onions and bologna. I just put them on at 3pm...should be done at 5. Got a recipe to pickle them and it sounded so good..I'm trying it. Cross your finners for me. Weather is 31º with about 10 - 15 mph winds..so don' think I need any ice. I am using my Coleman cooler cold smoker that I made this spring. It works great. I couldn't help myself, so I added some huge cloves of gahhlick and then added 2 whole heads,,gotta have some gahhlick.
