BASIC OldSmokey

one of the great advantages the 22" OldSmokey has is that the fire pan for the charcoal is 8" below the grill grate. it's low enough that you can cook directly over the charcoal - "roast" and the flare-ups won't burn your food. this is especially great with chicken. the temperature at the grill level is just a little over 300°, perfect for roasting.

this is just split chicken breasts, salt&pepper, direct over RoyalOak briquets. it doesn't get any more basic. it took them 45'mins to 165°IT

Be mighty careful of those Texas winds SB. They wreak havoc on those tinny old smokeys.My bent os will be a flower bucket this Spring!  ???

I have always enjoyed grilling on the Old Smokey. I know a hot searing fire is what ya look for when grilling, but the OS is a slower more relaxed grilling experience.....perfect for chicken pcs......
