Pork Tenders grilled on the OldSmokey

the big 22" OldSmokey's charcoal fire pan is 8" below the grill grate. to get it to a higher grilling temperature you can add 5 Coke/beer cans under the charcoal pan. this raises it to 4½"ins below the grill grate.

another trick that makes lighting the charcoal in the chimney faster is to squirt a little charcoal lighter fluid on the newspaper in the bottom of the chimney before you add the charcoal. you get a much faster, hotter burn from the paper, it burns longer, cuts the lighting time down, and you still don't get any fluid taste in the charcoal.
