SV Bison Ribeyes with Compound Butter

We were busy today getting our home ready for our holiday travelers. I also found some time to cold-smoke cheese, and sea salt. Plus warm smoke a ham and a dbl. batch of Smokin Don's Hot and Spicy Pistachios. Plus made a batch of Sunday gravy! While all of this activity was going on a couple of bison steaks were taking a swim at 130F for about 4 hours. Boiled up the pasta, and steamed some corn. I got a pan screaming hot to sear the steaks and dinner was ready. Served with a bottle of zinfandel, the steak was tender and full of flavor, and the pasta with Sunday gravy brought back many memories of days gone by. It was a great way to start the holiday week!

Well these de Buyer mineral pans are 99% iron. But they are not cast, rather they are stamped, and after seasoning, (by  boiling potato skins) they get better with each use. Ours are virtually non-stick but without the dangerous chemicals Teflon and other non-stick mfrs use. They can go from stovetop to broiler/ oven and these pans can take extreme heat making them excellent searing pans. Before getting a sous vide unit, to make a beautiful restaurant-quality steak, I would sear on high heat and then finish to IT in the oven, using the same pan. These pans truly have improved my chops in the kitchen!
