Christmas Ham/Stuffing

We have a great day outside today for this time of year, so I done the Ham and Stuffing out on the Pellet Grill.

Waiting to come up in temp a little

Cranked grill to 350* for the stuffing and to finish off the ham

Its just a pretty basic recipe I found awhile ago on Webbers Blog and have since modified it some to suit our tastes. I use this same recipe for whatever I am having and just change the broth used in the mix for the meat I am having it with. Its nothing fancy, but it works for us. This is what I used today,

½ cup butter
1 leek stalk removed
2 stalks celery
12 ounce bottle of Guinness (the other 23 are for the cook!!)
1 cup chopped onion
2 tbsp fresh sage
2 tbsp fresh parsley
2 cups ham broth
2 eggs
6 cups of dried bread cubes
¼ tsp salt
¼ tsp pepper
 
I throw everything but the bread cubes in a skillet for about 10 - 15 mins, then add the bread cubes, mix it together and right to the grill for 30 mins on 350*

Bookmarked!  I like the Guinness part the best.  Using different broths for/from different proteins is a good thought, also.  Thank you.
