Oak Smoked Sous Vide Country Style Ribs

The bone-in CSR’s were cold smoked for 1.5 hours over a large pan of ice. It was 44 degrees outside yesterday.   
Internal temp after smoking was 39 degrees.  They were given a light coating of EVOO and seasoned with Top
Secret #2.  Vacuum sealed and waiting for the hot tub to come up to 140 degree temp.  These will be enjoying
the tub for the next 21 to 24 hours.


Both packages into the pool to get happy!


Here they are after 22 hours.  Definitely fall apart done!


Here’s your plate with some leftover sweet heat beans.


These were melt in your mouth delicious with a light smoky flavor.  I will definitely do CSR’s this way again.

I didn't sear these Pam. I normally sear on my SRG, but this time decided to go with what came out of the tub. And I am sure that I have enough
other "toys" to use to replace the Traeger junior.  Besides, knowing my son he will get tired of it or when he transfers to another Coast Guard base
I will be getting it back. In the meantime I am eyeballing the new Rec Tec mini!  8) ;)
