Sous vide lobster tail on a bed of risotto with peas and parm. I dare you not to eat this Pappy peas and all!

No problem. Shell two thawed lobster tails and vac pack with 2 tbl of butter. Into the bath at 130F for 45 minutes. This is just about the amount of time to cook the risotto. Add the frozen peas to the rice about 10 min before the rice is done. Plate the rice and peas and add the parm. Lobster on top and curl your toes!

Tee and I were talking this afternoon about your short rib post.  I said, "I can't wait until Rick posts another lobster meal.  Prayers answered!!  Looks fantastic!!

Tell me more about the SV lobster and your risotto.  My wife's birthday is a couple of weeks away.  This would make a great meal for her.

Sous vide is an excellent cooking method for seafood.  There is such a fine temperature line between undercooked and rubber lobster, crab, and shrimp.  Sous vide makes it simple enough so that even the home cook can prepare perfectly cooked seafood.

I haven't tried seafood yet in SV, but it's time I give it a try, especially after seeing these results. ;)
