Wendys sister flew in from Colorado (boy,are her arms tired  ;D) and is coming up any minute now along with their Momma. We grabbed a Traeger on the cheap over the holidays for those times when I just cant set outside and tend to the fire (today is one of those days  :( )

Last night I removed the silver from some St.Louis cut poke ribs. Each side of the ribs were laced with black pepper,minced onion,Fine Swine & Bovine and then packed in Dark Brown Sugar. Wrapped up tight to get happy overnight in the fridge.

This morning, I unwrapped the ribs and evenly distributed the sticky slush over the ribs and laced em down with Fine Swine &
Bovine.

Using a tube smoker with Pecan pellets...gonna cold smoke for about an hour and a half then will turn on the pooper for 250 for 4 hours with a one hour ride in hd foil with a little apple juice and beer inside.

I don't see any TendaRub smoke! You sure these are going to be proper ribs ;)
