Ingredients:
At least 1 pound Loveless Cafe Country Smoked Bacon, chopped
1 pound lean ground beef
1 1/2 cups coarsely chopped onion
1 large green pepper, coarsely chopped
1 can (28oz) whole tomatoes un-drained, coarsely chopped
1 can (15oz) pinto beans un-drained (or great northern beans or navy beans)
1 cup picante sauce (I use medium)
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon salt
In a large Dutch oven or sauce pan, cook bacon over medium low heat, stirring frequently, until crisp. (Be sure to cook up a few extra slices for any onlookers, or yourself) Remove paper to drain with a slotted spoon. In leftover bacon grease, brown ground beef with onions and peppers, drain excess liquid. Add reserve bacon and remaining ingredients; mix well. Bring to a boil. Reduce heat, cover and simmer on low for 20-25 minutes. Sever over chips, topped with whatever your heart desires – cheddar cheese, chipotle hot sauce, more bacon – or just eat as is!
