Now, I know Texas,KC,Memphis,St.Louis and the Carolinas are highly regarded with their style of BBQ.........but.......

California luckily has Tri-Tip and Santa Maria grilling over red oak to throw into the mix.

The outfit in Long Beach,California that is making my offset/smoker/grill makes a Santa Maria grill that turns your Weber Kettle into one

Yup.  The single 2  with an extra barrel liner and the Santa Maria insert.

He makes his grill/smokers in the evenings and on the weekends as a second job.

I just think the Santa Maria add-on for the kettle is just genius, now the Weber can do everything  8) 8)

That is reason to buy a Weber Kettle just for making some tri-tip

My first cookers we're homemade 55 gal drum cookers 8)
Give me a barrel, expanded metal , nuts & bolts,  a drill, a handsaw with a blade put in backwards & a 12 pack beer & we could make one in 90 minutes  ::)
