Sliced Pork Butt on the Pooper

I couldn't bring myself to stay at work on a day that was 75 degrees at the end of January, so I booked some paid time off and left at 8:30 AM.  :D  I also had an 8 lb pork butt in the fridge that was getting close to its expiration.  I wanted to have something ready for a late lunch/early dinner with little maintenance.  Sliced butt was the solution.  Drizzled a little bit of olive oil and added a heavy dose of course salt and course black pepper.  A little bit of garlic powder and into the Davy Crockett at 350 degrees.  I cooked it on cooling racks in a shallow sheet pan with a 1 lb bag of sauerkraut at the bottom.  The kraut was just for aromatics and moisture in the cooking chamber, but what was left of it was an interesting cabbage crisp LOL.  Pork hit 175 at 3.5 hours, and I rested it for 1/2 hour on the counter before slicing.  SWMBO might never let me do a butt any other way based on how this turned out both in flavor and texture.  Besides the time and maintenance factor, I did it to prove a point.  SWMBO does a lot of pork loin, and I have told her that she can do a small butt the same way for less $$$ and that it will turn out moister and more flavorful than loin.  I could have probably pulled it at 170 instead of 175 and left a tiny bit more bite to the meat, but she said she preferred it this way where it was almost ready to pull and melted as you chewed it.

P.S. There is a random picture of a turkey in here that I did on the kamado a weekend or two ago.  There was nothing worth documenting about the cook that you haven't seen in my other "turkey on the kamado" threads, but while carving the bird it came apart in a rather unique way and created this photo-op.

Both the butt and the turkey look fantastic Billy. I may need to try it this way soon.

Total accident that it came apart that way.  I was just tugging at a leg after cutting down to the joints, and it happened.  Probably couldn't do it again if I tried.
