Pork Fajitas

My parents went to Mexico last week and brought me back chilies y limon (chilies and lime) spice mix they tried when they were down there.  I had some avocados too, so I thought I would make fajitas for dinner. I just used pork loin seared on both sides to get color then cooked the peppers, onion, garlic and jalapeno, sliced the pork and added it to the veggies until cooked through.

For the pork I just used the chilies and lime seasoning and some fresh black pepper as seasoning mix had salt listed after chilies on the ingredients.  The pepper and onion mix I used chili powder, cumin, salt, pepper, and some fresh lime zest.  For the guac I used 1 1/2 avocados a little diced tomato, diced red onion, lime juice, salt, pepper, jalapeno, and a touch of olive oil (along with the lime juice help stop it from turning brown if left overs).

I served it with some lime wedges and left over jambalaya rice mix that had some leftover PBC chicken in it.

PS- I cook to taste (like my grandmom taught me) hence very few measurements.  I eye ball everything until it looks good to me, sorry for nothing exact on spices. Just taste and adjust.

Never ever thought of pork meat for fajitas....but now that I come to think of it, what a wonderful pairing of flavors....gonna taste and adjust when I try this  :P :P
