Pork Steak stick Smoke

  While making burgers and sausage the other day I decided to cut off a nice pork steak from a shoulder. 
I decided to sear it on the Hibachi and finish it in the grill wrapped in foil nice and slow.
 I built a fire with pecan sticks off a limb that fell in the yard. Topped those with three or four large chunks of oak lump charcoal.
 The pecan smelled really good so when I unwrapped the steak I decided to put it back on the now much cooler Hibachi with a few short pieces of pecan smoking pretty heavy.
Wow it turned out so good. Kerry s comment was "whatever you did to this you need to do more often". 
 I know some scoff at "sticks from the yard" but maybe they need to get out more...
 The other piece in the pick was the bone and I decided it would be good for picking at... And it was.

Nicely done!  I love pork steaks done low & slow until they are fork tender like that. YUM!!!

Yum!  Two of my neighbors know if they are cutting down or  trimming their oak or maple trees to save some pieces for me.  Nothing better than using wood that is around you!
