Pork Tenderloin wrapped in Bacon

I couldnt figure out what to have for a lunch/dinner combo today. Went to the store and came home with 2 Tenderloins. Figured we could slice one up for sammy's for lunch, then have the other for dinner later.

Dusted them up with Tatonka Dust, Mrs. Dash Garlic/Herb, Salt, Pepper, then wrapped them in Bacon, then added more Tatonka to the outside. Cooked at 225* till it was 150. I slowly migrating from usual 165*.  :P I must say this was very moist, juicy and tender. It almost melted in your mouth!!







Topped it off with 2 slices of Pepper Jack Cheese and Homemade Horseradish and some Potato Salad

The only problem with Bacon wrapped TenderloinsI at 145F is you need to partially cook the bacon

Hadn't thought of that.  I've done it with Pork Loins and the bacon cooked.  I guess due to the longer cooking time.
