Sombody Started This - Breakfast Fatty

I saw this on the site shortly after I joined last year.  I had some home made maple sausage in the freezer staring me down wanting me to get it on the smoker in some form.  Of course there was thick sliced bacon in the fridge so what else should a guy do but get them together and get them on the smoker.

I made a basket-weave kinda thing with the bacon, formed the sausage into a log and rolled the whole thing together.  out to the smoker it went.  I put it on at 180 degrees for about 30 minutes then cranked it up to 425 degrees.  I pulled the fatty off the smoker when the Maverick said it was at 155 IT. 

I don't remember who posted this process but - if you are out there and looking - thanks for the idea - it was outstanding.

My son came over for breakfast (a nice surprise - we enjoyed the visit).  I sent the leftovers home with him - and funny thing I was at the stop light next to him this morning and he was chowing on a breakfast sandwich he made out of the leftover fatty  :)

Looks great.  A few of us have posted bacon weaved fatty cooks...

Yep looks good.    I stuff mi9ne with egg and cheese then drown with syrup  :D

I just did my first fatty last week too!!   AND-- believe it or not, it IS diet friendly when you're eating low carb! :)   

We did ours with cream cheese and candied jalapenos (made with Splenda) with some sugar free syrup on top.  OMG SO GOOD!!!   Couldn't believe I hadn't made one of these sooner!! 



James managed to run BOTH grills out of pellets making these this weekend.   He was stockpiling to make sure he wouldn't run out this whole week. :)

There is no limits when it comes to the stuffing. I partially scrambled some eggs then added them to some crunchy well cooked hash browns and added ham and chopped green peppers and onions for the stuffing.......outrageous.........
