Game of Thrones returned to HBO, and the wife was very excited.  Me, I enjoy the show but I don't get crazed with many things, even keel type of guy.  She wanted a feast so I made ribs, and she made tuna casserole and Reese's peanut butter cookies.

PB cookies are just peanut butter cookie mix or refrigerated dough balled up and cooked in mini muffin tin for 8-10 minutes.  Right after you pull them out of the oven (350F) push in Reese's PB mini cups into the center and spoon out to cool over night. Its pretty good stuff, and very simple to make.



Tuna Casserole:
1 lb elbows
2 8oz packs of Medium Cheddar (we buy blocks and shred ourselves)
1 8oz pack of Sharp Cheddar
1 can of Cream of Mushroom
1 can full of milk (cream of mushroom can full)
1 stick of butter
1 can of solid tuna in water
2 oz of pasta water

Boil the elbows for 1 minute less than the box says for al dente, meanwhile mix the can of soup milk and stick of butter over low heat to melt the butter.  Add the tuna.  Once the pasta is drained keep it off the heat and put it back into pot.  Mix in the soup mixture in with the pasta and add the pasta water.  Mix the the sharp cheddar and 3/4 of the medium cheddar.  The last 1/4 goes on top.  Once well mixed add to a 9x13 pan, top with the rest of the cheese to make a nice crust.  Put it into a 350F oven until bubbling and the top is slightly browned.



Ribs, used maple wood from my neighbor's tree that fell during an ice storm. Temp started at about 280, but I got it down within the first 45 minutes to about 240 and let it ride.  After about 4 hours I sauced for 45 minutes then wrapped for the last 45.  Best ones I've made so far, wife was happy and agreed they were the best ones I've made her.

12 hours rubbed (9 hours wrapped, 3 hours unwrapped)



Riblets as a snack.  I tried making them quasi burnt ends (first attempt) added more rub, extra brown sugar, and sauced before back on the pit for another hour.  They were tasty, wife actually ate most of them.



Final product:







Game of Thrones time with an after dinner drink.  Christmas gift with a wedding gift.

I'll take a pass on the TV show - but the meal - especially the tuna casserole looks and sounds great. Pappy, you can slide me your portion! Very nice cook!

That's quite the feast you had.  I really like the way you did those rib tips (I love rib tips as much or maybe even more than the ribs themselves).
