Remnants of Isaac are moving across the Midwest this weekend, so we are getting some much needed rain.   5.6" reported in a little town just SE of us overnight..

I've got 56 pounds of ribs to smoke, so you gotta do what you gotta do.



2nd in command is less than impressed.  ;D




Clear at the moment, so I dropped the redneck canopy down and got to work on 4 racks of bbacks. (party this afternoon)



Bringing the flavor.




Rubbed and cruising along at 245°.




Our team magnets and related swag started showing up this week, so I blinged out my freezer.




Time to start the Buffalo/Starnes Chicken dip.    Stay tuned...

Love the logo!!!  Shame to see a beauty of a pit out in the rain but what the heck...we be grillin and we be Que'in no matter the weather!!

Squirt, You're a trooper, and so is that MAK!

Isaac is now heading our way. You can see it rolling in as I type this.  I guess we need to get our easy up canopy out if I want to do any smoking this weekend.

If figures we need all the rain we can get and it still swerves out and away from us. Some good looking eats there Squirt.  The Bling looks PDG as well.

You are a determined cook, no matter the weather.  Good luck with the Isaac blowover.  The redneck canopy looks a little vulnerable.

Ribs were a hit.  They could have gone an hour longer (or 15° hotter), but the taste was there.   Sent a rack home with each couple along with some Buffalo Chicken dip. (also a hit)

Another round of rain..




Dip is ready.  Transferred it to a crock pot inside.




Ribs after the last spritz, right before I foiled them in pairs and parked in my Samsbro.




Rested for an hour, and then sliced up the first rack.  2 bones immediately went missing.   ;)




Many hours later...    Fired the MAK back up at 350° to burn off the rib residue and enjoyed a..

Day 2!   This was waiting for me in the garage.   A 42 pound ribcicle.



After some prying with my clean screwdriver and a couple bottles of water, we got to work.

First layer in the MAK.




Squirted and heavily dusted with..




Top rack.




Here comes the sun!  (and the humidity)




Traeger is high and dry, so I fired him up and loaded with the last 6 racks.




I retreated to the air conditioning and left my sentry in charge.




I'll check back in a few hours.

Getting some color now.   I'll probably go out and flip/rotate them all in those racks in an hour or so.

I've got some hot spots in both of those grills, so I wanted to flip them and rearrange a bit.
A couple were starting to stick, so that was a good time to yank them out and give them a good spritz.

I'll check them again around 3 and see if they need some foil time, or if I should go straight to the cambro..

Most of the Traeger ribs are done, so off they come into the waiting Cambro..






Spread some of the MAKRibs over to the Traeger so I can get those racks out of the way.



And some rearranging..






The ribs on the inside of the 'stacks' didn't get much color, so I'll let them go a while longer.
