We didn’t have much spring weather and this week went right into summer; it was 86 today. Tuesday and Wednesday was mowing grass; it takes me two days now. Tuesday we ate carry ins and for Wednesday I had some ham thawed out that I had done on my Traeger. There was enough for ham sandwiches for supper and enough to make ham salad. I sliced enough thin for two good sandwiches and ground the rest with some hard boiled eggs. My wife makes the ham salad and it is good. I shredded some cabbage to make slaw to go with the sandwiches.
I heated the ham in my Lodge steel skillet and topped with some baby Swiss cheese and melted under the broiler. We had it on seeded rye bread with mustard and Claussen’s dill pickles. I should have let the wife do the slaw too; she does a good job on it.
Today was a rest day for me. My wife went to water aerobics after her lunch. I coated some bacon with a light sprinkle of Savor’s Super Pig and put it in my Traeger ate 225 deg. and it was done in an hour. I had it on some seeded rye bread with mustard. That was my lunch.
To make the ham salad I run the ham and some hard boiled eggs through my grinder using the coarse die. Then my wife adds sweet pickle relish, mustard and Hellmanns mayonnaise. She does not have a recipe just goes by how much ham there is and tasting as she goes.
We both had the ham salad and slaw for supper. She eats her ham salad with potato chips! I like mine on crackers or tonight I had it on toasted seeded rye bread with a little mustard. Not many pics but this is pretty simple stuff!
