Doc Holly's dream "Hawaiian" dish...

They call it "Swineapple" - a hollowed-out pineapple stuffed with country ribs and wrapped in bacon before smoking. No, I probably won't try it but it opens up a whole new landscape of faux-Hawaiian entree ideas for Doc Holly.

LOL!  One of the guys at worked called me over to his desk yesterday to see this same picture and ask if I would cook it for him.  :D

OK REALLY, REALLY dumb question, were the ribs cooked first or cooked in the pineapple ?

Try using SPAM instead of country ribs to make it more island authentic.

Don't laugh, but I have taken a block of Spam, rubbed it in mustard and a healthy dose of rub and put it on the smoker when doing ribs. Cook it till it has some bark. It is pretty good.

Not laughing, TP - delicious! Just give it some cuts so it "blooms" like an onion. I live in the state that invented and makes Spam - love it. My wife hates it, but it still makes my breakfast plate from time to time.
