Sunday dinner pork shoulder
« Reply #-1 on: May 25, 2015, 08:51:14 PM »
my sisters nephew came to town over the weekend. He requested a smoked butt so I decided to do one for dinner Sunday.
I marinaded it in Dr Pepper over night and made up a dry rub for it. I didn't feel like tending the tank so I decided to use the Red... I installed a 10psi regulator with a valve so I could run the grill cooler. It held at about 230 all day with no problem. I used some foil to block off the vents and hold more smoke in.
It went on about 9:30am,the meat temp stalled at 140degrees about one o'clock so I moved it up to the top rack. This worked and I wrapped it in foil at 2:45. It cooked another hour and then I just let it rest in the foil wrapped in a towel another hour.
This was without a dought the best to date! I think it's even better today...
I made some Hubba Bubba sauce last week And it definitely gets better after a couple days in the fridge.
We added some veggies, crab and cheese stuffed peppers.
Kerry made a pound cake and served that with fresh fruit. Glad she doesn't mKe those often... I would hurt myself!
