Decided to smoke up two game hens I had in the deep freezer. One has fine swine and bovine with some three pigs kc Cherry rub and the other hen has super pig and mo rockin chicken. Both got apple juice injected as well. .
Will smoke for 1.5 hrs on p-5 setting due to it being 90° out.
Ok so after the 1.5hr on smoke turned the temp up to 225° for about two hours.
After that it's saucing time
And now will set at 180° for 20 min and they will come off to rest
Resting came to a halt since the wife wanted to eat.
