Quick Ribs

I wanted a few ribs to chew on for the games yesterday and I was cooking for just me, SOoo
I picked up a cheap pack of rib tips and threw them on the old Char-Broil, setup for indirect ribs.



I ran them hot with the intake vent under the fire about half open and the exhaust vent over the ribs about half open.



They were at 170° at 1h 40'mins so I took them out, saused them and put them in my roaster for another hour.



The roaster has a rack under the foil. I put a glass of water in there to keep it moist inside the roaster.



They were fall off the bone - 3 hours start to finish



After I ate the ones I wanted I pulled the rest of the rib meat off of the bones for soft tacos to come.

pulled rib taco - snack

enough pork in a little Pyrex bowl for a taco
use the tortilla for the lid on the bowl when you nuke it
that way they both come out warmed up just right

a slice of avocado and some Pico-De-Gallo
and a cold Shiner Wild Hare Pale Ale

I can tell you aren't from Texas ;)

in Texas milk would never go with avocado &or Pico-De-Gallo (Jalapeños)
